Salmonellosis – an acute infectious disease, the causative agent of which are pathogens – Salmonella. Known more than 2200 types of Salmonella, of which about 100 are pathogenic for humans. Salmonellosis is transmitted through fecal-oral route, predominantly through food. The main source of infection are farm animals (cattle, pigs, ducks, geese, chicken), rodents, and people. Factors in the spread of Salmonella, as a rule, are products of animal origin. The disease most often occurs through consumption of infected meat and meat products, eggs, especially when added to the dishes of raw (e.g., mayonnaise, sauce, cream, pudding). Infection of food occurs in contact with crude and finished products during storage and transportation, using common kitchen utensils. The incubation period of Salmonella can last from several hours to two days. The disease begins acutely with increasing temperature and the increase of signs of intoxication (headache, aching muscles, weakness). Then, abdominal pain spastic character, with predominant localization in the upper abdomen and umbilical region, nausea and often vomiting. Soon associated diarrhea, the stool fairly quickly become watery, frothy character, fetid, and sometimes marked them with a greenish tint. After suffering salmonellosis, regardless of its form, some patients continue to identify the causative agent (bacteria carrying) up to a month. If bacteriocarrier is delayed more than three months, it will be considered chronic. To prevent Salmonella disease, you must follow certain rules: – raw products of animal origin should immediately after purchase to put in the fridge and store them separately; – eggs before use, wash. The fresher the egg, the less the probability of propagation in it of Salmonella; – to defrost the chickens should be refrigerated. When cooking poultry, don't touch other products; – meat and poultry should be good to boil or fry small pieces; – meals, which add to milk or egg yolk, it is necessary to boil thoroughly; – raw food to use separate dishes and utensils, after use rinse with boiling water; – follow the kitchen perfect cleanness, to promptly remove garbage, food waste, to prevent flies, cockroaches and rodents; – you must observe good personal hygiene, wash hands frequently with soap, especially after returning from the street, before eating, after using the toilet. If the requirements for hand washing, use wet wipes, disinfectant for hands; – do not mix freshly prepared meals with its remnants of the previous day; – do not buy food in places of spontaneous trade; – while traveling do not eat perishable foods: dairy, meat, salads dressed with mayonnaise or sour cream, cream products.
